There is a huge difference between the Rebel series and the 7D IMHO (I have used both.); the Rebel series are entry-level camera's, while the 7D is the top model of the Canon APS-C line and aimed at semi-professional users. It is bigger, heavier and has a lot more functions to play with.
But if you are looking to upgrade, I would suggest looking into lenses first, as they are the easiest way to improve quality.

Thank you for the info. I was curious.
When we got the camera it came with an EF 75-300mm Lens and the EFS 18-55mm with the Image Stabilizer. She into nature so most of her Photos have been based around that. I'd like to get her another 75-300mm with the stabilizer as the current one doesn't have it.
If you have a suggestion as to what lens would be worth investing in, please let me know.

Well John, I guess it would all depend on your budget and your needs for a lens!

Canon has a few good zoom lenses and there are plenty of alternatives from Tamron and Sigma too, but like I said it also depends on your budget as you can get a zoom lens from $300 to $3,000 USD or even more..
