Using a menu from my old FSX, I was able to increase the size and save as a .bmp but it won't affect the print inside of the menu, which is a whole other
can of worms.

Yep, in the sim, Go to 'Settings'
Then 'Display'
Then "Hardware' (on the top row of tabs)
There, you will find a list of screen resolutions, choose one with a lower number that you are currently using.
That should do it!

No you cant stretch the menu's unfortunately and changing the screen resolution in settings/hardware makes no difference to the menu's size either
Edit: a slight addendum, changing the screen resolution does work if I switch to full screen but not in windowed mode.
I usually run FS9 in windowed mode because full screen screws up the menu bar when in a flight.
