The default 747? Your description of the problem is a bit thin. Does it stall taking off? Powersettings? Flaps?
You might check fuel and payload and reduce that prior to taking off. Also, watch your angle of attack. Keep it below 15 degrees (if I recall right).

Generally in the 747 the nose will drop pretty good, but in a very high AOA deep stall roll the plane on edge and the nose will fall through. That works in the real one anyway...
