Slow updates, & no visible weapons for military aircraft are the main reasons I don't use the MP for aircraft. Doesn't matter so much for scenery.

That's because the Sabre uses a FSX MDL interior model. Any non-native port-over will crash the sim in VR.
You could try Chuck's guide for the F14. It's for the DCS version, so a lot of the weapons stuff will be irrelevant, but the startup should be useful.

I do have it installed, but only taken a quick look. Others would be better qualified to say what works and what doesn't.
With the phantom, neither the exterior, nor the interior have been converted, they're both still fsx models. I haven't actually loaded it up in sim yet, just downloaded to take a look.

Unlike the Sabre, which has had the exterior converted to MSFS native GLTF, these Phantoms are still FSX models inside and out.
I removed one of the springs from the stick. That made a huge difference for me.
Have you got the MSFS native version from Rob, or are you trying to port over the FSX version?
I'll have a look at rescaling the pilots for the next patch. I want to add some of the improvements from the T models to the singles anyway. No ETA as yet.

Make sure when you unzipped you didn't end up with an extra folder layer. Should be something like:
