Tom, press SHIFT+3 and this brings up the Fuel and Payload Manager screen. Here you can change the crew and top up your tanks. For further information had a read of the manual.

Thanks for that, just didn't realise. I learnt a lot working with A2A as to how simulator aircraft are built and at times it makes the real ones a lot easier to work with :)
