Hi yankeeclipper747, sorry I havent got back on this sooner, I havent been around, if you havent already fixed this, you might try going to CFS2 settings/display/advanced and check the video resolution is sane for your hardware.
I think the game acceses the possible settings from your graphic card data. May your card can output screen size / refresh rates that your monitor does not support.

If you load a flight and when the screen is black if you press Alt do you see the menu bar? if so select Views and uncheck "Full Screen"; does that make a difference?

Can't think what else it might be.
