Why is the texturing in Gmax so difficult? I succeeded in making a box (Hangar), but to get the textures to fit to there right sides is a constant PITA. Is there a really good no-nonsense tutorial for this?

I know my comment won't help you, Cees, but just let you know I lost my patience with Gmax exactly at that very same point... So I only can give you my solidarity. Let's hope one guru will give a hand.

The first thing to do would be to have a look at the in-built tutos.
Then, I recommend two tuts :

the two last ones of this page : I combine the two techniques to create my templates.
If you already have a texture map, you baiscally have to assign the map as a diffuse material, then put a uvw map (choose the axis - how it fits), then unwrap and edit. With some practise, it becomes very easy to do.

Thanks for the response guys! It's a bit of a struggle to get it all working, but I'll get there, I'm sure! For now my immedaite problem is that all the surfaces change when I think I edit only one. What am I missing here?

Difficult to see what you really mean but you are probably selecting all the faces of your box and so all of them are then on the template. What to do :
1) use a mesh it modifier in the stack, select polygon subobject, select the face you want to map.
2) use the uvw map modifier, choose the axis (X, Y, Z) for the map to fit (if your template is already done, you can hit the button 'fit').
3) put an unwrap modifier, click edit - you should have a square box with the vertexes represented as little boxes at the corners. Move, scale, etc...

I solved the texturing problem! Now onto an animation problem! How do I get an animation to work when I come in the vicinity of the object with the plane?
