I have recently rediscovered my love for the 'Vark... again. I have had the Alphasim F-111 in the past and was happy with it but now I see that there is a newer(?) Virtavia model, and JustFlight and Golden Key Studios also have a "Triple 1" available. So I am wondering which one might be worth investing in, and... with all of the new weapons mods for FSX going on these days, I am wondering if any of the new Aardvark packages might have this capability?

Don't forget the JustFlight and freeware versions.

When I did my research I came across this comparison: https://sites.google.com/site/shess0757/f-111-comparison If you look around Steve's site you'll find the freeware version. Based on what I read on their Facebook page they're always tweaking it.

Each version has its own attributes. Some have more repaints, if that is what you're looking for, where others have more realistic radar or more model variations. My favorite is the Virtavia one.

They're all good. The GKS item has a manual wingsweep, while the Virtavia one works from the flaps command.

The Virtavia VC looks a little better.

This exact subject has been discussed in previous threads - http://www.sim-outhouse.com/sohforums/showthread.php?83517-Freeware-F-111-vs-Payware chief among them, with product specific threads as per YoYo's example.
