They start with a hacked sim1.dll file, but Pete Dowson has developed a new FSUIPC version that lets you adjust things directly. FSUIPC 4.859i is out with FSUIPC 4.859j coming that should make aircraft specific mods possible.
Unfortunately I'm in the middle of building a new system so can't try it myself yet. It does look very promising.
