I recommend this one for completeness, practicality, and readability.

My first book was Understanding Exposure, by Bryan Peterson. It is probably the most popular beginner photography book out there.

I've also got a couple "Real World" series books on photoshop and camera raw that are absolutely incredible. They go into crazy detail.
