Does anyone have a recommendation for an rar extractor?

Also, how do I switch back to a zip extractor as the default once the rar is installed?

7-zip http://www.7-zip.org/ will also handle RAR archives and is open-source software (free).
It will also handle ZIP and CAB files along with several other archive formats so you can use it for pretty much any archive you've got to unpack.

You can associate it with whichever archives you choose too, so you can still keep your file preferences to use Window's built-in PKZip-based utility for ZIPs if you so choose.

I've got two paid licenses for WinRAR and still love it but on my new Windows7 rig I've been using just 7-Zip and have been very happy with it so far (except that I can't create RAR archives with it...just unpack them).

I have always used Izarc, it is free and works for all compressed file types I am aware of.

If You need only to unpack .rar files You would follow Moparmike suggestion, I use 7-zip since a long time and I am very happy of it.
Just my 2 cents
