I will try a rudimentary explanation because I only have a rudimentary understanding.
Mesh is what defines the elevation of the surface at a location.
LandClass/Waterclass are what define the behavior characteristics of that surface- whether it behaves and looks like land or whether it behaves and looks like water.
Mesh can make even the wateryest waterclass surface appear to be a mountain range- but it will be a mountain range that your plane will still sink into- unless you change the surface to landclass.
Now. does that clear it right up for ya?

Hi Snuffy.
Mesh is the framework of the terrain... it's what makes the hills and valleys.
Landclass is what determines which texture to be draped over the mesh framwork.
